Perogies

Delicious. This is a great recipe to prepare on a "ladies" afternoon with your friends. A medium dry white wine goes perfectly.

Ingredients
- FILLING:
- 2 1/2 cups flour
- 1 tsp. salt
- 1 well beaten egg
- 1 cup warm milk
- 2 Tbsp. butter or margarine
- Cooled mashed potatoes mixed with cream cheese, onions, bacon, cheese whiz, chives, parsley or anything you like.
Preparation
Step 1
Put flour and salt into a bowl. Melt butter in the milk. Beat the egg. Mix all together and roll into a ball. Let sit for 1 hour at room temperature.
Roll dough out onto a floured surface. Use a cup or glass to cut circles and placing them on to waxed paper. Place a small amount of filling into the circles making sure to keep it clear of the edges. Fold one side of dough onto other side and seal with fingers. Then seal again with fingers dipped in flour. The seal is critical so seal well.
Drop sealed perogies into a pot full of rolling boiling water with two tablespoons of oil in it, and leave them until they float to the top. Transfer to a frying pan and coat them with melted butter, fry until slightly browned.
Remove from pan and place them on a cookie sheet in a single layer. Place sheet in freezer. When perogies are frozen, divide them in serving size plastic bags and freeze.
