Pork Back Ribs

Ingredients

  • 4 Racks of baby back ribs
  • Dry Rub
  • 1 tbsp (15ml) paprika
  • 1 tbsp (15ml) pepper
  • 2 tsp (10ml) kosher salt
  • BBQ Sauce
  • (Makes 1 1/2 cups)
  • 2 tbsp (25ml) butter
  • 1 small onion, minced
  • 1 large clove of garlic minced
  • 1 cup (250ml) ketchup
  • 3/4 cup (175ml) brown sugar
  • 1/4 cup (50ml) cider vinegar
  • 1 tsp (5ml) soy sauce
  • 1 tsp (5ml) hot sauce or chili paste

Step 1

Trim any excess fat from the ribs. Remove the thin membrane from the underside and discard.
Combine dry rub ingredients in a bowl. Season the meaty side of the ribs with the dry rub.
Place the ribs in a large shallow baking tray and wrop tightly with foil.
Put in a preheated 325F oven for 1 1/2-2 hours.

In a small saucepan, melt the butter over medium heat. Cook the onion until soft. Add the garlic.
Add the ketchup, brown sugar, vinegar, soy sauce and simmer for 10 minutes.
Stir in hot sauce and adjust seasonings to taste. (Make ahead: Can be doubled easily and refrigerated for several days.)

Remove ribs from the oven. Remove foil. Place on a preheated gas or charcoal grill for 3-4 minutes each side.
Brush generously with the sauce and grill a further 3-4 minutes each side or until the sauce begins to caramelize.
Serve with additional sauce.
