Ingredients
- Butter, room temperature
- 1 shallot, minced
- 2 c heavy cream
- 1 clove garlic
- Kosher salt & ground pepper
- 3 med russet potatoes (about 2 1\2 lbs), peeled & sliced 1/8 in thick (thickness very important to cook properly)
- 2 c grated sharp white or yellow cheddar
- 1/4 c grated Parmesan

Step 1
Heat oven to 375. Butter 1 1/2 - 2 qt baking dish & sprinkle with just a bit of shallot. Add heavy cream to med pan along with remaining shallot, garlic, salt & pepper. Place over med heat & bring to simmer while stirring. Let simmer until you see liquid begin to thicken, 2-3 min.
Layer 1/3 of sliced potatoes in baking dish, cover with some cheddar & a sprinkling of Parmesan. Repeat layering twice more. Pour hot liquid over potatoes. Add remaining cheese, cover with foil & bake 1 hr. Remove foil & bake until cheese is golden brown, 15-20 min. Let rest for 10 min. before slicing so it can settle.
