Potato Salad

  • 3 lbs red potatoes, cut into 1 in cubes
  • 1/2 c EVOO
  • 3 T lemon juice
  • 2 T minced fresh basil or fresh thyme
  • 2 T minced fresh parsley
  • 1 T red wine vinegar
  • 1 t grated lemon peel
  • 3/4 t salt
  • 1/2 t pepper
  • 1 sm onion, finely chopped



Step 1

Place potatoes in lg pan & cover with water. Bring to boil. Reduce heat; cover & simmer 10-15 min until tender.

In sm bowl whisk oil, lemon juice, herbs, vinegar, lemon peel, salt & pepper.

Drain potatoes. Place in lg bowl; add onion. Drizzle with vinaigrette; toss to coat. Serve warm or chill before serving.
