- 6 Jalapeno peppers
- 1/2 cup Shredded Raw Cheese
- 1/4 cup Organic Cottage Cheese
- 4 Scallions - chopped fine
- 1/2 cup Spelt Flour
- 1 1/2 cups Ezekiel Bread Crumbs
- 4 Large Egg Whites
- Sea Salt & Pepper
- 1/2 cup Organic Plain

Directions
1. Preheat broiler to 450 ◦F; foil baking sheet.
2. Cut jalapenos in half; scrape out seeds & membrane. Place peppers on a baking sheet and broil for 2 minutes to char
and allow cooling.
3. In a small bowl, mix cheese, cottage cheese, scallions & then fill each pepper with the mix.
4. Put spelt flour in shallow dish. Put the bread crumbs in a separate dish. Whip the eggs till foamy.
5. In batches, dredge the jalapenos in egg whites and coat lightly in spelt flour, but be careful with the filling. Add
peppers to crumbs and coat.
6. Spread peppers on baking sheet and season.
7. Bake till golden brown and crispy for 20 minutes.
8. Small bowl: Mix remaining scallions and yogurt. Serve as a dip with the peppers.
