Crockpot Chicken Enchilada Soup

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 pkt taco bell fajita seasoning
  • 1 can fire roasted diced tomatoes
  • 1 pkg frozen corn
  • 1 can enchilada sauce
  • 1 can cream of chicken soup
  • 2-3 frozen chicken breasts
  • 1 cup shredded Colby Jack cheese

Preparation

Step 1

In bottom of crock pot combine beans, fajita seasoning, tomatoes, and corn. Top with chicken breasts. In large bowl, whisk together enchilada sauce and soup. Pour mixture over top of chicken. Cook on low 6 hours. Shred chicken and top with cheese. Serve with sour cream.
