Cheesy Enchilada Soup

Ingredients

  • 1.5 lb ground beef
  • 2 cans (15oz each) tomato sauce
  • 2 cans enchilada sauce
  • 1 can chili beans, drained
  • 1 can Great Northern beans, drained
  • 1 can whole kernal corn, drained
  • 1 can fire-roasted diced tomatoes
  • 1 T cumin
  • 1/2 t salt
  • 2 cups shredded Monterey Jack cheese
  • Sour cream and shredded cheese

Preparation

Step 1

Cook ground beef and drain. Add other ingredients. Bring to boil over medium high heat. Reduce heat and simmer for 25 minutes. Add cheese; stirring until melted. Garnish with sour cream and shredded cheese.
