Cookie Ice Creamwiches

“Who needed the ice-cream man when we had Gram's ice-cream sandwiches?”
Ingredients
- 8 tablespoons (1 stick) butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 (1-ounce) squares semisweet baking chocolate, melted
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Vanilla or mint chocolate chip ice cream, softened
Preparation
Step 1
Beat butter and sugar in large bowl until light and fluffy. Beat in egg and vanilla extract. Beat in melted chocolate. Combine flour, baking soda and salt in small bowl; add to butter mixture. Form dough into two disks; wrap in plastic wrap and refrigerate until firm, at least 2 hours.
Preheat oven to 350°F. Grease two baking sheets. Roll one dough disk between two sheets of waxed paper to 1/4- to 1/8-inch thickness. Remove top sheet of waxed paper; invert dough onto prepared baking sheet.
Score dough into 3 × 2-inch rectangles. Do not cut completely through dough. Cut excess scraps of dough from edges; add to second dough disk and repeat rolling and scoring until all of dough is scored. Pierce rectangles with fork.
Bake until set, about 10 minutes. Let cookies stand on baking sheets about 1 minute. Cut through score marks while cookies are still warm. Remove cookies to wire racks and cool.
Spread half of cookies with ice cream; top with remaining cookies. Wrap in plastic wrap and freeze 1 hour.

Grandma's Secret Trick:
Gram always made the tastiest ice-cream sandwiches with these flat chocolate cookies. To prevent the cookies from puffing up too much, she added only a smidgen of baking soda. If Grandma needed to soften a quart of ice cream in a hurry, her trick was to microwave it on HIGH for about 20 seconds.
