Basil Shrimp Vermicelli

Ingredients
- 2 oz vermicelli or thin spaghetti in thirds
- 6 oz shelled, deveined, raw large shrimp (21-30)
- 1/2 c. packed fresh spinach, coarsely chopped
- 1/2 c. grape tomatoes, quartered
- 2 tbsp chopped fresh basil
- 2 tsp extra-virgin olive oil
- 1/2 tsp minced garlic
- 1/8 tsp salt
- 1/8 tsp crushed red pepper
- 1 tbsp grated Parmesan

Preparation
Step 1
Cook pasta according to directions. Add shrimp during last 3 minutes of cooking; cook until pink and drain well. Toss the pasta, shrimp, and all remaining ingredients, except cheese, in a large bowl until spinach is slightly wilted. Top with cheese and serve.
