Ingredients

  • 1/2

    cup cooked chicken, chopped

  • 1/4

    cup chopped Gala apple

  • 1/2

    stalk celery, finely chopped

  • 1

    tablespoon red onion, finely chopped

  • 1

    slice center-cut bacon, cooked and crumbled

  • 1

    tablespoon low-fat Greek yogurt (plain)

  • 1

    tablespoon low-fat mayonnaise (can be substituted with another tablespoon of yogurt)

  • 1

    teaspoon chopped pecans (optional)

  • 2

    teaspoons chopped almonds (optional)

  • Salt, pepper and stevia to taste

  • Lettuce leaves or low-carb wraps, for serving (optional)

Directions

In a small bowl, combine chicken, apple, celery, onion and bacon. Add pecans or almonds, if using. Stir in yogurt and mayonnaise. Sprinkle in salt, pepper and stevia to taste. Serve as is, or on a lettuce wrap or wrap of choice.
