Tequila Shrimp

  • 1/2 lb. Bacon, diced
  • 1 lb. Shrimp
  • 3 oz. Tequila
  • 3-4 cloves minced garlic
  • 1 jalapeno minced fine
  • 1/2 lb. Shredded cheese (jack and cheddar)
  • 1 juicy lime
  • 2 T Cilantro



Step 1

Brown bacon and keep 2T drippings. Saute shrimp, garlic and jalapeno in drippings 3-4 min (do in two batches if doubling). Flambe with the tequila, squeeze lime juice on top. Toss bacon back in (crumbled), put into au gratin dish. Top with cheese and put in oven until melted and bubbly. Sprinkle with cilantro and serve!
