Palmier Cookies

Ingredients

  • 1 box puff pastry (2 sheets total) defrosted overnight in the fridge
  • All-purpose flour for dusting table and puff pastry while rolling
  • 3-4 Tbs butter, melted
  • 1/3 cup white sugar
  • 1 Tbs ground cinnamon (reserve 2-3 Tbs for final sprinkling before baking)
  • Parchment paper for lining baking trays

Preparation

Step 1

Preheat the oven to 400 degrees and also melt 4 Tbs of butter in a small pot.

Make the cinnamon sugar in a small mixing bowl by combining 1/3 cup white sugar with 1 Tbs ground cinnamon.

Lay the defrosted puff pastry sheets out on a floured work surface, sprinkle a little more flour over the top and use a rolling pin to roll them out into a longer and little bit thinner rectangle than when they started.

Next, use a pastry brush to divide the melted butter over both sheets and then evenly sprinkle a generous amount of the cinnamon sugar over the top of each one.

Next, starting along one long side, tightly roll the puff pastry half way and then roll the other side to meet the first one in the middle.

Cut those crosswise into 1/2 inch thick slices and very carefully transfer those to parchment paper lined baking trays...flat side down.

Leave 2 inches between each cookie and then sprinkle a little of the remaining cinnamon sugar over the top of each one and place the trays into the preheated oven.

They'll take just about 15 minutes to bake and it's a good idea to switch the trays from top to bottom halfway through.

HINTS:

Plan ahead and defrost 1 box...(two sheets)...of puff pastry in the fridge overnight.

The name "palmier" refers to the fact that the cookies end up looking like tops of palm trees.
