Ingredients
- 2 cups coleslaw mix
- 1/4 cup blue cheese crumbles
- 1 (11 ounce) can mandarin oranges, drained
- 1/4 cup raspberry vinaigrette dressing
- 1 pound pork tenderloin, sliced crosswise in 10 pieces
- 1/4 cup orange marmalade
- 1 cup bread crumbs
- On Sale
- 1/2 cup finely chopped pecans
- 2 tablespoons cooking oil
- 10 small split buns
Preparation
Step 1
In a large bowl toss coleslaw mix with cheese, oranges and dressing. Cover with plastic wrap and place in refrigerator until ready to use.
Using hands press pork pieces to ¼ inch thick. Rub marmalade into pieces.
In a shallow bowl combine bread crumbs and pecans. Coat each pork piece one at a time with mixture. If need be press mixture to stick to pieces.
In a large skillet heat oil over medium high heat. Cook pork in hot oil 2 to 3 minutes per side, or until done.
For sliders, place a slice of pork on bottom bun, top with prepared slaw and top with other bun half and serve
