  • cookie dough:
  • 2 2/3 c flour
  • 3/4 c plus 2 tbsp butter, cut in small pieces
  • 3 egg yolks
  • 1/2 c sugar
  • 2 tbsp vanilla sugar
  • grated peel of 1 lemon
  • 1/2 c ground hazelnuts
  • filling:
  • 1/3 c strawberry jam
  • juice of 1 lemon
  • powdered sugar



Step 1

To make cookie dough, sift flour into a large bowl; add butter. Put egg yolks, unflavored sugar, vanilla sugar, lemon peel and hazelnuts in the center; knead to make a dough. Press into a ball and wrap in foil or plastic wrap. Refrigerate 30 minutes.
Preheat oven to 400°. Grease a baking sheet. On a floured surface, roll out dough about 1/4 inch thick. Cut into an equal number of 2 1/2 inch rounds and rings. Place on greased baking sheet. Bake 10 minutes or until golden brown. Carefully lift rounds and rings from baking sheet with a spatula; cool on a rack.
To make filling, combine jam and lemon juice. Spread jam mixture over cookie rounds. Sift powdered sugar generously over cookie rings. Place a sugared ring cookie on each round.
