  • 2 tbsp butter
  • 2 cups finely diced zucchini
  • 2 red or green peppers, seeded and diced
  • 4 cloves garlic, minced
  • 1 tbsp dried basil
  • 2 tsp dried oregano
  • 2 cups Uncle Ben's converted rice
  • 2-1/2 cups chicken broth
  • 1-1/2 cups milk
  • 1 tsp salt
  • 1 tomato chopped
  • 1/4 cup sliced, pitted olives
  • 2 green onions, sliced
  • pepper to taste



Step 1

Melt butter in a large saucepan over medium heat. Add zucchini, red peppers, garlic, basil and oregano; cook 5 minutes. Add rice, stir to combine. Add chicken broth, milk and salt. Bring to a boil, then reduce heat to low and simmer covered 20 to 25 minutes, or until liquid has been absorbed. Stir in tomato, olives, green onions and pepper to taste. Let stand, covered, 5 minutes before serving.
