- 3 sweet potatoes, scrubbed and dried
- 1 T olive oil
- 1 T dried herbs de Provence, or 1 tsp each: dried parsley, sage, rosemary, and thyme
- Salt to taste

Step 1
Preheat oven to 500 degrees F. Cut potatoes into thin wedges. Drizzle olive oil on potatoes, sprinkle with herbs, and toss. Place potatoes on cookie sheet and roast for 25 minutes, until crisp at edges. Season with salt.
