Standard Mushroom Sauce

  • 3 tablespoons margarine
  • 1 garlic clove (optional)
  • 1/2 pound mushrooms sliced
  • 1 small onion
  • 1 tablespoon flour
  • 1 cup liquid (milk, beef, vegetable, chicken stock, depending on recipe used)
  • 1/4 cup sherry
  • 1 dash nutmeg

Step 1

Fry garlic in hot fat about 1 minute, discard. Saute mushrooms about 5 minutes, remove from pan and set aside.

Saute onions about 4 minutes. Stir in flour, add liquid a little at a time, stirring constantly. Add sherry, nutmeg and the sauteed mushrooms. Simmer for 10 to 15 minutes.

This recipe yields about 2 cups.
