Ingredients

  • 5 lbs Hamburger
  • 5 Heaping tsp Morton's "Tender Quick" Curing Salt
  • 2 1/2 Heaping tsp Mustard Seed
  • 1 tsp Ground Pepper
  • 2 1/2 tsp Garlic Salt
  • 1/2 tsp Cayenne Pepper

Preparation

Step 1

Day 1
mix all ingredients, knead well. Refrigerate in sealed container with plastic wrap making sure no air will touch meat.

Day 2
Knead meat mix again, cover and continue refrigerating

Day 3
Form meat into 4 log rolls. Place rolls on an oven save rack or grill. Place rack on inside a cookie sheet, so excess fat can drip.

Bake 7 hour at 150. Turn rolls 45 degrees every 2 hour
