Apple & Pear Cheese Crisp

“My aunt said this dessert tasted like old-fashioned Vermont apple pie with Cheddar cheese.”

Ingredients

  • 3 medium apples
  • 3 large pears
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup light corn syrup
  • 2/3 cup sifted all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 5 1/3 tablespoons butter, softened
  • 1 cup shredded sharp Cheddar cheese

Preparation

Step 1

Preheat the oven to 350F. Grease a 2-quart baking dish.


Peel and slice the apples and pears to yield about 3 cups each. Arrange in prepared baking dish. Sprinkle cinnamon over fruit. Drizzle fruit with lemon juice, then with corn syrup.


Combine the flour, granulated sugar and salt in a medium bowl and mix well. Cut in butter with a pastry blender until mixture is crumbly. Add Cheddar and mix gently. Sprinkle over fruit.


Bake until apples and pears are tender, about 1 hour. Serve warm.

Grandma's Secret Tip:

Grandma's apple corer/slicer made short work of cutting the fruit for this dessert. Her apple slicer was round with two handles and it had a circle in the center to cut out the core and eight blades arranged like spokes around the center circle. She peeled the fruit and placed it on a cutting board. Then she positioned the apple slicer on top of the fruit and pressed the slicer downward firmly and quickly through the fruit. The slices fell away neatly.
