Potato Salad - Smashed (Emeril's)

Ingredients

  • 2 lbs new potatoes, scrubbed & cut into 1/2 in pieces
  • 2 t salt
  • 1/2 c minced yellow onions
  • 3 hard boiled eggs, chopped
  • 1 t minced garlic
  • 1/2 - 3/4 c mayo
  • 1/4 c Dijon mustard
  • 2 T fresh lemon juice
  • 1 T light brown sugar
  • 1/2 t hot pepper sauce
  • 1/2 t Worcestershire sauce
  • 1 t fresh ground pepper

Preparation

Step 1

In lg pan place potatoes with cold water to cover & 1 t salt. Bring to boil over high heat. Reduce heat to med-low & simmer until fork tender, about 10 min. Drain.

In lg mixing bowl mash potatoes with hand held mixer or heavy fork. (Should still be very lumpy). Mix in onions, eggs, garlic.

In sm bowl combine 1/2 c mayo, mustard, lemon juice & brown sugar stirring to dissolve sugar. Add pepper sauce, Worcestershire, remaining 1 t salt & pepper. Serve warm or cold.
