Ingredients

  • 2 lbs unpeeled red potatoes, cubed
  • 1/4 red onion, finely chopped
  • 1 dill pickle, finely chopped
  • 2 celery stalks, finely chopped
  • 1/2 c mayo
  • 1/2 c sour cream
  • 1 T apple cider vinegar
  • 3 T minced fresh basil
  • 3 T minced fresh chives
  • 3 T minced fresh flat leaf parsley
  • 3 hard cooked eggs, chopped
  • 1 t kosher salt
  • 1/2 t fresh black pepper
  • Garnishes: chopped fresh basil, chives, parsley

Preparation

Step 1

Cook potatoes in boiling salted water to cover, 12 min or until tender; drain. Rinse with cold water; drain. Combine potatoes, onion, celery & pickle in lg bowl. Stir together mayo & next 8 ingredients. Fold into potato mixture. Cover & chill 2 hrs or more before serving. Garnish if desired.
