Ingredients
- 4 boneless skinless chicken breasts, 4-6 oz each
- 2 TBL olive oil
- 1/2 bread crumbs
- 1/8 C salad elegant
- 1/8 tsp granulated garlic powder
- 1/2 tsp calif. basil
- 1/2-1/2 tsp salt to taste (sea salt if have)
- 1/4 --1/2 tsp pepper to taste
- 1 egg beaten
- 1 TBL milk
- 1/3 C flour
Preparation
Step 1
preheat oven to 425
combine bread crumbs, salad elegant, garlic, oregano & basil in shallow bowl
season mixture w/ S & P
in second shallow bowl, beat together egg & milk
place flour in 3rd shallow bowl
lightly coat each chicken breast w/ flour, shaking off excess
dip chicken in egg mixture & then bread crumbs, making sure to evenly coat both sides
heat oil in lg. skillet over mid. heat
place chicken breasts in pan 2 at a time
brown on each side, abt. 2 min
breading will darken quickly so make sure to watch pan. you just want to get breading beautiful brown & finish cooking in oven
remove chicken from pan & place on baking rack that has been placed on baking sheet
-- if you don't have baking rack, place chicken directly on baking sheet that has been sprayed w/ cooking spray
brown 2nd batch of chicken
transfer to baking sheet
bake 425 for 15 min or until chicken is cooked through
