RHUBARB CUSTARD PIE

Another recipe from my mom... not sure where she got it... but it's always a hit when I make it.

Ingredients

  • CUSTARD:
  • 1 cup sugar
  • 1 tbsp flour
  • 3 tbsp milk
  • 2 egg yolks, slightly beaten
  • 2 1/2 cups chopped rhubarb
  • 2 tbsp butter
  • PIE:
  • 1 unbaked pie shell◘
  • MERINGUE:
  • 2 eggs whites
  • 5 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla

Preparation

Step 1

CUSTARD:

Mix all ingredients. Pour into pie crust. Bake at 425 for 10 minutes, 350 for 30 minutes.

MERINGUE:

Beat all together till stiff. Pour over cooked custard in pie while still hot. Continue baking at 325 till tips of meringue are golden.
