Fricassee of Brussell Sprouts - Jaques Pepín

Ingredients

  • 1 1/2 pounds brussel sprouts
  • 8 ounces of good bacon
  • salt
  • pepper
  • olive oil

Preparation

Step 1

1. Dice the bacon into a small dice. Put into a heated 12-inch nonstick saute pan.

2. Using a food processor, process the brussel sprouts into strips.

3. When the bacon is about half way to crispy, add the brussel sprouts, salt and pepper. Toss with the bacon, cover and cook until crisp-tender. (If you think the brussel sprouts are not softening sufficiently, add a bit of water to the pan.)

4. Remove the lid, taste for seasoning, add a little bit of olive oil, toss again and serve.
