WHITE BEAN CHILI

Ingredients

  • 1 T vegetable oil
  • 12 large yellow onion, chopped
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 T or more chili powder, to taste
  • 1 (1 lb) can whole tomatoes with juice
  • 1 (1 lb} can cooked Great Northern or navy beans, drained and rinsed
  • 1 14-oz can beef broth
  • Grated cheddar cheese, for garnish

Preparation

Step 1

In a large heavy saudcepan with close-fitting lid, heat the oil over medium heat. Add the onion and garlic and saute until the onion is fragrant, 3 to 5 min. Add the tomatoes, drained beans and beef broth and stir to mix thoroughly breaking up the tomatoes with the spoon. Turn up the heat to bring to a boil, cover the pot and reduce the heat to low.

Simmer 20 minutes, stirring occasionally and further breaking the tomatoes as much as you wish. When the chili is hot, you may thicken it slightly by mashing some of the beans if you desire.

Serve with grated cheddar cheese, nonfat or low-fat yogurt, salsa or what have your.
