Ingredients
- 3/4 C whole wheat flour
- 1/2 C unbleached all-purpose flour
- 1 C regular oats
- 1 tbsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1/3 C brown sugar
- 1/3 C granulated sugar substitute or sugar
- 1 egg
- 1 tsp vanilla extract
- 3/4 C Greek yogurt (I used 0% plain Chobani)
- 2 tbsp butter, softened
- 3/4 C non-fat milk
- 1/2 C mini chocolate chips
Preparation
Step 1
Preheat oven to 375. Line muffin tin with cupcakes liners or lightly spray with non-stick cooking spray.
In a large bowl, whisk together flours, oats, baking powder, baking soda, salt, and sugars.
In a small bowl, whisk together egg, vanilla, yogurt, butter, and milk. Add wet ingredients to dry ingredients and stir until just combined. Stir in chocolate chips.
Fill liners about 2/3 full with batter. Bake for 15-20 min. or until a toothpick inserted in the center comes out clean.
Store in an airtight container.
