Ingredients
- 1 sheet refrigerated pie pastry
- 4 oz shredded part skim mozzarella
- 1/2 c sweet onion
- 2 sm plum tomatoes, seeded & thinly sliced
- 3 med fresh mushrooms, thinly sliced
- 1/4 c shredded Parmesan
- 3 eggs
- 1/2 c half & half cream
- 1/2 t ground mustard
- 1 \2 t dried basil
- 1/2 t dried oregano
- 1/2 t dried thyme

Preparation
Step 1
Cut pastry sheet in half. Refrigerate one half for another use. On lightly floured surface, roll out remaining half into 8 in circle. Transfer to 7 in pie plate; flute edges.
Layer 1/2 of mozzarella, onion & tomato in pastry. Top with mushrooms; layer with remaining mozzarella, onion & tomato. Sprinkle with Parmesan. In sm bowl combine eggs, cream, mustard & herbs; pour over top. Bake at 350 for 45-55 min until knife inserted near center comes out clean. Let stand for 10 min before cutting.
