Jalapeno Poppers

Ingredients

  • 7 whole jalapenos, halved and seeded
  • 4 oz. cream cheese
  • 4 oz. shredded cheddar cheese (1 c.)
  • 1/4 c. chopped cilantro
  • 1 c. flour
  • 2 beaten eggs
  • 2 c. dry cornbread, cornflake crumbs or crushed tortilla chips
  • vegetable oil for frying
  • sour cream
  • salsa

Preparation

Step 1

In a bowl combine cheeses and cilantro. Mix well. Mound 1 tbsp of cheese mixture in each jalapeno half and refrigerate until firm.

Flour, egg and crumb stuffed jalaepenos. Refrigerate at least one hour.

Heat oil in high sided pan or deep fryer to depth of 1/3. Deep fry coated jalapenos until golden (1 1/2 min.) Serve poppers with sour cream and salsa.
