Mushrooms And Eggs
- 1 pound mushrooms
- 1 tablespoon butter
- 4 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
- 1 cup milk
- 6 hard boiled eggs sliced
- 2 tablespoons breadcrumbs
Wash mushrooms quickly, drain and slice. Cook in heavy saucepan over high heat about 4 minutes. Drain and save liquid.
Brown mushrooms lightly in butter. Mix flour, salt and pepper together and add milk slowly to make smooth paste. Add the mushroom liquid and cook over a slow fire, stirring constantly until thick. Add mushrooms.
Put a layer of eggs in a casserole dish, then a layer of mushroom mixture. Repeat this process until all ingredients are used. Sprinkle top with breadcrumbs. Bake at 350 degrees about 20 minutes or until breadcrumbs are brown.
