Ingredients
- Falafel:
- 1 can of drained garbanzo beans (chickpeas)
- 1 onion chopped
- 1/2 cup fresh parsley chopped
- 2 cloves of garlic chopped
- 1 egg
- 2 tsp cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1 dash of pepper
- 1 pinch of cayenne pepper
- 1 tsp lemon juice
- 1 tsp baking powder
- 1 TBS olive oil
- 1 cup plain bread crumbs
- Pita bread
- Cucumber Sauce:
- 1/2 cup sour cream
- 1/2 cup plain yogurt
- 1 cup peeled chopped cucumber
- 2 tsp rice wine or white wine vinegar
- 2 minced cloves of garlic
- 1/2 tsp salt
- pepper to taste
- dill weed to your liking
Preparation
Step 1
Mash the chickpeas in large bowl. Add the chopped onion, parsley and garlic to a food processor, and blend. Combine all the falafel ingredients but bread crumbs in the bowl with mashed chickpea. Slowly add bread crumbs until they reach a consistency that is easily moldable. Form into silver dollar patties. Fry in pan or bake for 20 minutes at 350 degrees if really health conscious.
Combine all the sauce ingredients and stir together. After combined, put the sauce in the fridge for at least 30 minutes.
Combine both onto warm pitas and serve.
