Shrimp asparagus au gratin

Ingredients

  • Hollandaise mixture:
  • 1 cup cooked rice
  • Two small onions, chopped
  • 3 ounces butter, divided into six pats
  • 2 lbs asparagus
  • 2 –1/2 pounds peeled deveined shrimp
  • 1/4 to 1/2 cup Parmesan cheese
  • Breadcrumbs
  • Two packages Knorr's Swiss hollandaise sauce
  • Two egg yolks
  • 1/4 cup whipping cream
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon Worcestershire

Preparation

Step 1

Preheat oven to 375°.
Sauté onions, and add asparagus. Cook 2 to 5 minutes. Add shrimp, and sauté another two minutes. Add hollandaise mixture (may only need half of the amount above.)
Place rice on bottom of a 9 x 13" baking dish. Spread shrimp mixture over rice. Top with 1/2 cup Parmesan. Sprinkle with breadcrumbs and pats of butter. Bake 10 to 12 minutes.
