Indian Butter Chicken
By Addie
Look for mild curry paste at the grocery store to keep things cool for any tender tongues. Most children love the creaminess of butter chicken and paired with steamed Jasmine rice and roasted vegetables, it makes for an easy meal. If you want to add a special touch, fry up some pappadums to dip in the butter chicken sauce.
Ingredients
- 2 tbsp butter
- 1 tbsp ground cumin
- 2-3 tbsp yellow or red curry paste
- 1 tbsp fresh ginger, minced
- 1 cuptomato sauce
- 3/4 cup coconut milk
- 8 skinless, bone-in chicken drumsticks and thighs (approx. 3 lbs)
Preparation
Step 1
1. Melt butter and pour in slow cooker. Stir in all ingredients except chicken.
2. Season chicken with salt and pepper and add to sauce. Turn chicken to coat.
3. Cook on high setting for 2 1/2 hours or low for 5 hours.

REVIEW:
I loved this recipe. The smells throughout the cooking process were amazing, and the chicken was very flavourful. Brooklin liked watching it cook through the day and said “me love it!'
