Farmer's breakfast casserole
- 3 Cups frozen shredded hash brown potatoes
- 3/4 cup shredded cheddar cheese
- 1 cup diced cooked ham, sausage, bacon or soy crumbles
- 4 beaten eggs
- 1 diced red pepper
- 1 1/2 cups milk or 12 oz can evaporated milk
- 1/8 tsp salt
- 1/8 tsp peper
Preparation time 25mins
Cooking time 70mins
Coat 2 qt square baking dish with cooking spray. Arrange potatoes evenly in bottom of dish. Sprinkle with cheese, meat and red pepper.
In a bowl combine eggs, milk, salt & pepper. Pour mixture over potato mixture in dish.
Bake uncovered at 350 degree oven for 40-50 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before serving.
Make ahead directions. Prepare as above, cover and chill for up to 24 hours.
Bake uncovered at 350 for 50-55 minutes.
