Ingredients
- 3 whole chicken breasts, boned, skinned, split and pounded thin
- 4 oz. goat cheese & 3 oz. cream cheese (can use all goat cheese)
- 1 c. shredded basil
- 1/2 c. diced roasted red pepper
- 2-3 tbsp. toasted pine nuts
- 3 eggs, divided
- all-purpose flour
- 2 1/4 c. fresh bread crumbs, divided
- 2 tbsp. chopped parsely
- salt and pepper, to taste
- oil for fryiing
Preparation
Step 1
Preheat oven to 400.
Place chicken breasts on a clean work surface. In a bowl blend together goat cheese, cream cheese, basil, red pepper, pine nuts, 1/4 c. bread crumbs and 1 egg yolk. Mix well. Season with salt and pepper.
Place 3 tbsp. of the cheese mixture on each chicken breast and spread to oven chicken, leaving a border all around. Roll breast tightly to enclose filling.
Beat remaining eggs. In three pans, place flour, eggs and bread crumbs that have been mixed with parsley, salt and pepper. Place rolled chicken first in the flour, then the eggs and finally in bread crumbs. Place on a wax paper lined sheetpan and chill for at least 15-20 minutes.
In a skillet heat oil to a depth of 1/2". Add chicken breasts. Cook on all sides until golden brown. Place on a sheetpan and cook in the oven 12-15 minutes to complete the cooking. Let chicken rest 4-5 minutes before slicing and serving.
