FRESH SQUASH CASSEROLE

Ingredients

  • 3 T butter
  • 1 T olive oil
  • 1 medium onion chopped
  • 1 garlic clove chopped
  • 2 pds zucchini sliced
  • 2 pds yellow squash sliced
  • 3 eggs
  • 1/2 c half and half
  • 1 t salt
  • 1/4 t pepper
  • 1 T fresh thyme
  • 1/4 c panko bread crumbs
  • 1/4 c grated parmesan cheese

Preparation

Step 1

heat oven to 350
heat butter and oil in large skillet-add onion and garlic and cook 2 min
add zucchini and yellow squash
cover and cook over med heat 15 mins stirring occasionally
with a slotted spoon transfer mixture to buttered 2 qt casserole
combine eggs, half and half, salt, pepper and thyme
pour over squash and mix well
bake 35 mins
remove from oven and top with panko and grated cheese
place under broiler until brown about 3 mins
