Banana Nut Bread

Delicious and comforting... serve alone for breakfast or warm and top with a scoop of vanilla icecream for dessert.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 egg
- 1/2 cup sugar
- 1 1/2 cups mashed ripe banana (3-4 bananas)
- 1/4 cup Extra Virgin Olive Oil
- 1 teaspoon lemon peel, shredded
Preparation
Step 1
Heat oven to 350 degrees about 10 minutes before baking.
Line 9 by 5-inch baking pan with foil and oil with one tsp of extra virgin olive oil.
Mix and set aside the flour, baking soda, and cinnamon.
With electric mixer, beat together on high, 1 minute the egg, sugar and mashed bananas.
Add and beat for two minutes the remaining extra virgin olive oil and lemon peel.
Add dry to wet mixture and beat just to moisten. (Optional: mix in 1/2 cup chopped pecans or walnuts). Pour into prepared pan and bake 50 minutes or until pick inserted in center comes out clean. Makes 1 loaf.
