Ingredients
- 1 pound extra-lean ground turkey
- 1/2 teaspoon dried oregano
- 3 cloves garlic, minced
- 1 large egg, beaten
- 1/4 cup finely chopped onion
- 1/2 cup cooked brown rice, cooled
- 1/4 cup chopped fresh parsley Olive oil spray
- 1/2 teaspoon kosher salt
- Low-sodium, low-sugar jarred tomato sauce of your choice (optional)
- 1/2 teaspoon freshly ground black pepper

Preparation
Step 1
Spray a large, non-stick skillet generously with olive oil.
Combine all remaining ingredients in a large mixing bowl and shape into balls approximately 1-inch in diameter (makes about 30 balls).
Cook the meatballs on medium-high heat for 5-6 minutes, occasionally moving them around to brown all sides (if your pan is not large enough to fill all meatballs at once, cook them in batches).
Optional: once the meatballs are browned, you can simmer them all for 20 minutes in a low-sodium tomato sauce (preferably organic, with minimal sugar).
Serve by themselves, wrap them in lettuce leaves, or spoon over fiber-rich starches like quinoa, faro or whole-wheat pasta.
