Chicken with black olives and rosemary

Ingredients

  • 1 whole chicken, approximately 2 lbs
  • 1 small yellow onion
  • 3/8 cup EVOO
  • 1 cup dry white wine
  • 1 Tbsp fresh rosemary leaves finely chopped.
  • 1 Clove garlic, finely chopped
  • 1/4 pound pitted small black italian olives (the shiny ones)
  • 1 Tbsp cider vinegar

Step 1

1. Wash chicken and dry well. Discard neck and feet. Using poultry shears cut chicken intoo 12 pieces (Alternatively, purchase a whole chicken in pieces at the market).

2. Place onion and oil in a skillet. Add chicken pieces and brown on both sides over medium-high heat,

3. Reduce heat to low, add wine and cook for 30 minutes. Add rosemary, garlic, olives and vinegar and cook for 5 minutes more.
