Creamy Shrimp and Macaroni Salad

Ingredients

  • 1 8-oz package elbow macaroni
  • 1/2 cup chopped celery
  • 1/2 cup chopped green onions
  • 1/2 cup plus 3 Tbsp. mayonnaise
  • 1/4 cup chopped fresh parsley
  • 1 Tbsp. country-style Dijon mustard
  • 1 Tbsp. chopped fresh tarragon
  • 2 tsp. white wine vinegar
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. peeled & deveined shrimp

Preparation

Step 1

Cook elbow macaroni according to package directions - rinse with cold running water & set aside.
Coarsely chop 1 lb of shrimp. Stir in shrimp and mayonnaise into pasta. Cover & chill 1 hour.
