Truckstop Buttermilk Pancakes

Ingredients

  • 5 eggs
  • 1 1/2 cups milk
  • 3 tbsp butter, melted
  • 5 cups buttermilk
  • 5 cups flour
  • 5 tsp baking powder
  • 5 tsp baking soda
  • 1 tsp salt
  • 5 tbsp sugar
  • This make a lot of batter so feel free to cut recipe in half, using 2 eggs.

Preparation

Step 1

In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the dry ingredients and then stir into the wet ingredients. Stir until just blended, don't overmix. Adjust thickness adding more flour or buttermilk for desired thickness. Heat a large skillet over medium heat and coat with cooking spray. Pour 1/4 cupfulls of batter onto the skillet and cook until bubbles appear on the surface. Gently flip and cook until browned.
