Chicken - One Pan Sticky Thai Chicken

Ingredients
- 2 tsp vegetable oil
- 1 Tbsp fresh grated ginger
- 2 Tbsp lime juice
- 3 Tbsp fish sauce
- 1/3 cup brown sugar
- 8 boneless skinless chicken thighs
Preparation
Step 1
About 30 min ahead for both chicken and cocunut rice
1. Heat oil over medium high heat. Add giner and cook for 1 minute. Add lime juice, fish sauce and brown sugar and cook stirring for 1 minute. Add chicken and cook for 8 minutes.
2. Increase the heat to high, turn the chicken and cook another 5 minutes or until golden, sticky and cooked through.
Coconut Rice
Combine 2 cups jasmine or basamati rice with 2 1/2 cups of chicken broth and 1 cup of coconut milk and salt. bring to boil and reduce heat and cover for 15 min, let sit for 10 and serve,
