Hard Cooked Eggs in the Oven (Baked Eggs)

By

From Alton Brown's "I'm Just Here for the FOOD". Haven't tried this yet, but Alton says this provides a creamer egg than steaming or boiling. He says it is a bit harder to peel though. Posted in response to a recipe request. (NOTE: Servings depends on how many eggs you decide to cook!)

Ingredients

  • 2-4 dozen raw eggs
  • ice
  • water

Preparation

Step 1

1 Position oven racks in center of the oven.

2 Place eggs on racks.

3 Place baking sheet pan in bottom of oven (just in case aegg breaks).

4 Set oven to 325 degrees, and bake for 30 minutes.

5 When eggs are done, fill large bowl with ice water and move eggs into bowl.

6 Peel eggs as soon as they're cool enough to handle, then return them to ice water to thoroughly chill.
