Overnight Breakfast Casserole

This recipe was given to me in the 1980's. You can add different meats spices and cheeses to change it up. It's great if you have guests and need a make ahead breakfast. This is a tradition for us on Christmas morning!

Ingredients
- 1 pound of bacon, sausage or diced kielbasa, cooked or browned
- 8 slices of stale bread
- 4 tablespoons butter, softened
- 8 large eggs
- 2 cups 2% milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups shredded Cheddar cheese
- 1/2 cup green pepper, diced
- 1/2 cup onion, diced
Preparation
Step 1
In large bowl beat eggs and milk, add salt and pepper and cheese, set aside.
Butter bread on one side. Grease a 9 x 13 baking dish.
Line bottom of baking dish with bread, buttered side up. Cover the entire bottom of dish.
Spread cooked meat on top of the bread. Sprinkle with green pepper and onion. Pour egg and cheese mixture over all, evenly spreading the cheese.
Cover with foil and refrigerate overnight. Bake at 350 degrees for about 1 hour until lightly browned and set.

With 1 package of bacon @320 calories (I use Oscar Meyer cooked bacon, crisped in the microwave) - 257 per 1/12th serving.
With 2 packages of bacon @640 calories (I use Oscar Meyer cooked bacon, crisped in the microwave) - 283 per 1/12th serving.
With breakfast roll sausage @1380 calories - 345 per 1/12th serving.
With Polish Kielbasa @1190 calories (I use Hillshire Farms)- 329 per 1/12th serving.
