Ingredients
- 1 small beet, scrubbed
- 2 1/2 T olive oil, divided
- 1/3 of blood orange, peeled and cut into bite sized pieces
- 1/3 c beet greens
- 1/3 c baby spinach, cut into slivers
- 2 t raspberry vinegar or balsamic vinegar
- 1 t caraway seeds
- 3 T hemp hearts
- salt (optional)

Preparation
Step 1
Preheat oven to 400. Place beet in a roasting pan. Drizzle with 1 T olive oil. Roast 45 mins. Cool to room temp. Peel and cut the beet into bite size pieces. Place beet in a salad bowl. Add orange, greens and spinach.
In another bowl combine remaining oil with vinegar, seeds and salt, if using. Pour over salad and toss. Garnish with hemp hearts.
