Ingredients

  • 1/4 cup butter
  • 1/2 medium onion, finely diced
  • 3 small zucchinis, diced
  • 3 ears of Corn, husks and silk removed
  • 1/2 tsp sea salt
  • table grind pepper to taste

Preparation

Step 1

1.Cut Kernels from corn.
2. heat butter in a non stick skillet over medium heat, stirring occasionally until melted, add onion and saute until onion is translucent and starting to turn light golden in color about 5 minutes.
3.Add zucchini and corn, cook, and stir until zucchini is tender about 8 minutes. Season with salt and pepper

NOTE: Good also with leftover corn
