Ingredients
- 1 pound large shrimp (20-24 count size), peeled and deveined
- 1 tablespoon Extra Virgin Olive Oil®
- Kosher salt and black pepper
- 2 tablespoons lemon juice, fresh
- Romaine lettuce
- Your favorite croutons
- Parmesan and Garlic Artisan Vinaigrette (or make your own)
- Parmigiano Reggiano (shredded)
Preparation
Step 1
Preheat grill pan to med-high.
In a mixing bowl, toss shrimp, oil, salt & pepper.
Grill shrimp 2-3 minutes per side. Transfer to a plate, drizzle with lemon juice.
Meanwhile, prepare bite-sized pieces of fresh romaine lettuce and shredded Parmigiano Reggiano.
Toss lettuce mixture with Lucini™ Bold Parmesan & Garlic Artisan Vinaigrette. Top with shrimp and croutons.
Serve chilled.
