Ingredients

  • 1 pound mushrooms sliced (4 cups)
  • 3 tablespoons butter
  • 2 tablespoons minced onions
  • 1/2 cup cut-up celery
  • 1/4 cup diced carrot
  • 2 cups boiling water
  • 2 teaspoons chicken bouillon
  • 1 teaspoon salt
  • 1/8 teaspoon freshly-ground black pepper
  • 1 can evaporated milk
  • 1/2 cup milk
  • 3 tablespoons flour mixed into
  • 1/4 cup water

Step 1

Wash, slice and bring mushrooms to boil. Drain and set aside.

In skillet, cook with lid, the onions, celery and carrot in 3 tablespoons butter. Add the mushrooms and cook 5 minutes. Add the boiling water and chicken bouillon. Simmer uncovered 10 minutes.

Add salt, pepper, evaporated milk and milk. Bring almost to boiling. Pour in slowly the flour and water mixture. Cook and stir 10 minutes, just until it begins to boil.
