Green Beans Amandine

Green beans with almonds.
For green beans amandine, fresh green beans are pan fried with garlic and ground almonds to produce a flavorful, lightly crisp coating.

Ingredients

  • 1 pound green beans, trimmed
  • 2 tblsp unsalted butter
  • 1 garlic clove, minced
  • 1/2 cup skinned whole almonds, finely ground in a food processor
  • Salt and freshly ground black pepper

Preparation

Step 1

Cook beans in a 3-quart saucepan of boiling water until crisp-tender about 4 minutes.

Melt butter in a 12-inch non-stick skillet over moderate heat. Add garlic and cook, stirring until it just begins to turn golden, about 1 minute.

Add ground almonds and cook, stirring until they begin to color slightly, about 2 minutes.


Add beans and cook, stirring, until tender and heated through, about 2 minutes.

Season with salt and pepper.

Serve immediately.

Hint: I have cooked these the day before and heated up the next day and they are just as fresh.
