**Cathys Cilantro Rocky Mountain Grilled Shrimp
- 2 LBS unpeeled jumbo fresh shrimp
- 1/2 cup lime juice
- 1/3 cup olive oil
- 2 TBSP chopped fresh cilantro
- 1 clove garlic minced
- 1 jalapeno pepper seeded and chopped
- 1/4 tsp salt
- 1/4 tsp pepper
PEEL shrimp, leaving tains intact and devein
COMBINE lime juice and remaining ingredients; pour over shrimp
COVER and refrigerate 2 hours
Remove shrimp discarding marinade. Place shrimp on skewers.
COOK, without grill lid, over medium-hot coals 3-4 minutes on each side or until done.
