Ingredients
- 2 cups buttermilk
- 1 1/2 cups quick-cooking oatmeal
- 1/2 cup rolled oatmeal
- 1/4 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 cup whole-wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs, beaten
- 1/4 cup vegetable oil
- 2 - 4 tbsp butter

Step 1
Combine buttermilk, oats and brown sugar in a bowl. Mix well and let stand for 10 minutes. Add flours, baking powder and soda and salt, mix well. Then blend in eggs and oil until just mixed.
Melt 2 tbsp butter in a skillet or on a griddle. Add more buttermilk to batter if too thick. Pour 1/4 cup portions on griddle and cook.
